Superfood Veggie Boost drink

I love the “Super Veggie Boost” because it is an easy and simple drink to make, especially when using the readily available base of low-sodium tomato juice you can buy from most grocery stores. I get mine from Trader Joe’s. Whole Foods, I hear, has a good one with even less sodium.

By adding a few fresh vegetables I have on hand, a fresh fruit for sweetness, a handful of greens and additional superfood ingredients, I quickly make a superfood morning or snack drink that hydrates me with great nutrients in flavorful drink without the need for extensive preparation or hard-to-find ingredients.

The "Super Veggie Boost" is a revitalizing drink featuring low-sodium vegetable tomato juice blended with the vegetables you have on hand like carrots, celery, mixed greens, beet, green apple, ginger, lemon juice, turmeric, and optional powdered fiber and creatine. Packed with nutrients, this flavorful beverage provides a refreshing and energizing boost to support overall well-being.

Ingredients

  • 1 cup low-sodium vegetable tomato juice

  • A handful of mixed greens (baby spinach, baby kale, baby or romaine lettuce

  • 1 Scoop of walnuts or other tree nuts

  • An extra vegetable or two or three that you have on hand, carrots, celery, beets, mushrooms, cucumbers . . .

  • 1/2 green or other apple, cored and chopped

  • 1/4 teaspoon powdered ginger

  • 1/4 teaspoon turmeric powder

  • 1 tablespoon fresh lemon juice

  • A pinch of cayenne pepper and black pepper

  • Water adjusted to achieve desired consistency

  • Optional: 1 tablespoon powdered fiber (for added fiber boost)

  • Optional: 1 teaspoon creatine powder (for added energy, mental clarity and muscle maintenance

Directions

  • In a blender or bullet, combine the low-sodium vegetable tomato juice, walnuts, carrot, celery, mixed greens or romaine lettuce, beet, green apple, ginger, lemon juice, turmeric powder, and any other vegetables you have on hand (such as cucumber or bell pepper).
